Photo Friday/Recipe: Low Carbohydrate, Healthy Fat Coconut Cream Pie w a side of COVID-19 vaccine

This week’s photograph is of a delicious low carbohydrate, healthy fat coconut cream pie. It’s served after receiving a COVID-19 vaccination.

The recipe contains:

  • No grains (refined or whole)
  • No added sugar
  • No vegetable oils

These characteristics mean that the pie does not raise blood sugar, does not contribute to diabetes or heart disease, and does not promote the accumulation of visceral fat.

For appropriate reasons, people with metabolic disease or other complicating conditions are prioritized to receive vaccine. Those who are metabolically healthy are prioritized last, again for appropriate reasons.

My hope is that more people will be in the metabolically healthy category and therefore able to to be at the back of a vaccine line because their bodies are better prepared to face a future infectious threat.
