Recipe: Low Carbohydrate, Healthy Fat Pumpkin Pie

It’s that time again…

This is a low-carbohydrate, heathy fat pumpkin pie that contains

  • No grains (refined or whole)
  • No added sugar
  • No vegetable oils

I used coconut cream in the filling, heavy cream for the topping. I’ve previously eaten this and demonstrated no rise in blood glucose level (using a continuous glucose monitor)

Recipe

This is actually the same recipe I used when I first opened the recipes section on this blog 2 years ago. In 2020, I’d say it’s especially important to promote foods that support, rather than destroy metabolic health, and the ingredients in this recipe are far better than what would be found in a traditional pumpkin pie.
