This is an egg nog pie that’s low carbohydrate and contains healthy fats.
Specifically it does not contain:
- Grains (refined or whole)
- Added sugar
- Vegetable oils
The pie would not be suitable for someone who is vegan because it contains beef gelatin.
As expected, it did not cause a rise in blood sugar as measured with a continuous glucose monitor.
The nutmeg was a little more free-flowing than I expected for Pie 1.0. I photographed Pie 2.0 without.
